Last week I shared that I love spending time at my favorite tea house, Blue Willow Tea Room. The last time I visited, they served a delicious chilled strawberry soup that I’ve been craving ever since. So this week I decided to experiment and create my own recipe, which I have to say, turned out pretty terrific. It was a big hit with my family, so much so that I had to make another batch.
This is a great way to enjoy those luscious summer strawberries while they’re still in season! You can even use frozen strawberries if fresh aren’t available. And what could be easier than mixing everything right in your blender? Enjoy!
Chilled Strawberry Soup
- 2 Pints Fresh Strawberries (frozen if they’re not in season)
- 2 Cups Vanilla Yogurt
- 1/2 Cup Orange Juice
- 1/2 Cup Sugar
- 1/4 Tsp Ground Cardamom
- Fresh Mint for garnish (optional)
Remove stems from strawberries, cut into halves (quarters if they are large) and place in blender. Puree until smooth. Add in yogurt, orange juice, sugar and cardamom and blend. Chill for at least an hour and serve garnished with fresh mint.
*Tip: If the ingredients fill your blender, as they did mine, you may not be able to fully puree. Blend as much as possible then pour into a bowl and whisk until all ingredients are combined.
Serve with a fruity green tea or a nice cold-steeped tea.
