Cantaloupe isn’t one of my favorite fruits, I have to admit, but this chilled cantaloupe soup is changing my mind. It’s light and refreshing, perfect for cooling off on a hot summer day. It will even carry you into the early days of fall when the days are still warm.
This is an easy soup to whip up for a ladies luncheon or afternoon tea. It’s even a perfect budget-friendly after dinner treat for any summer meal.
Chilled Cantaloupe Soup
- 1 Cantaloupe – seeded and cubed
- 2 Cups Orange Juice
- 1/2 Lime – squeezed
- 1/2 Tsp Ground Cinnamon
- Fresh Mint for garnish (optional)
Seed cantaloupe and scoop out of rind. Cube and place in blender. Puree until smooth. Add in 1/2 cup orange juice and blend. Pour into large bowl, add remaining orange juice, lime juice, and cinnamon. Whisk together. Chill for at least an hour and serve garnished with fresh mint.
Serve with a black tea cold-steeped tea.
