Fruit and Nut Chocolates

Chocolate is always a nice addition to any afternoon tea. The fruit and nut chocolates are no exception. They’re not only delicious, they’re simple to make and you can combine different fruits and nuts in any variety you like.

In addition to being served at afternoon tea, they also make a nice gift for your friends who stop by to sip and nibble with you. Or you can make them for the holidays and package them with tea bags for a charming little gift.

Best of all, you can keep all the ingredients in your pantry so you can make them in a flash at the last minute.

Fruit and Nut Chocolates

What you need:

  • 10 oz bag of bittersweet chocolate chips – I like Ghiradelli
  • Asst. small fruits – I used dried cranberries and mandarin oranges and pears from fruit cups. I simply drained the cups and dried them fruit on a paper towel. In the summer, fresh berries are a wonderful addition as well.
  • Asst. nuts – I used almond slivers, pecans, and cashews.
  • Fresh mint for garnish

How to make them:

  • Pour the chocolate chips into a glass bowl and microwave for 1 minute. Stir. Continue microwaving in 30 second intervals until chocolate is completely melted, stirring in between.
  • Pour about 2 teaspoons of chocolate into a silicone mini cupcake pan (Note – do not use any other kind of mini cupcake pan unless you line with mini cupcake papers. The chocolate will stick and will not pop out.) To make the pouring easy, I used a small cookie scoop.
  • Add your fruit and nuts of choice, pressing them down into the chocolate. If you’d like, you can also add the mint leaves to the chocolate.
  • Refrigerate for an hour until chocolate is set. Pop the chocolates out of the silicone pan or remove them from the lined cupcake pan and remove the papers.
  • Place them on a serving plate and garnish with fresh mint. Refrigerate until ready to serve.

If you’d like to give them as gifts, place in small individual paper baking pans with lids.
